I cherish every pleasurable moment of the summer months. These golden days are elegant in their understated, peaceful way. However, after you rouse from your siesta in the warm sunlight, you will be in great need of something to refresh you. As it is my firm belief that anything attempted in summer should be casual and hassle-free, I shall share this nearly effortlessly homemade lemon ice cream recipe with you! I cannot even find the words to verbalize just how fabulous it tastes! I came by the recipe in Jane Cumberbatch’s exceptional lifebook Pure Style: Recipes for Every Day and from the first taste I knew it would be my new favorite dessert! It is my sincere hope that it becomes a regular in your household as well.
You will need:
3 Lemons
1 cup of sugar
2 cups of heavy whipping cream
Start by grating the rind of one lemon. This will be added to the mixture for a certain je ne sais quoi! Squeeze every precious drop of juice from all three of your lemons and combine with the sugar. Then, whip the cream and slowly add to the mixture. (Which should now consist of lemon juice, rind, sugar and cream!) I suggest pouring this into a shallow container for freezing, so as to make scooping a breeze. Place in the freezer. Jane Cumberbatch’s recipe suggested stirring with a fork when the outside is solid, but the inside is still mushy. However, by accident, I completely forgot this step, and it was still mouthwatering! Add fresh mint for extra delish!
